The form works; but if we add an email to the actions, it breaks the form. The user can't access the next page and our team isn't notified of a formfill.

I'm also encountering this issue where the webform integration isn't working properly. The form itself works, but as soon as we add an email action, it breaks. Users can't proceed to the next page, and our team doesn't receive notifications of form submissions. are you sure it is the E-Mail action and not maybe the E-Mail validation on an input field of the user?
I will drop you a DM to check if we are may working for the same customer, because i currently fixed a similar issue in a custom E-Mail field validation implementation. 😉
